Recipe Party - fruits of summer

hey all,
it's been awhile since I did the last recipe party. It was crockpot recipes, and the link is still on my sidebar.

For this party, I'd like everyone to share a recipe (or several recipes!) that uses summer fruits and vegetables.

It can be cooked or use fresh produce.

To participate, you can do one of two things:
1) if you have a blog, then post your recipe, with a link to this post AND comment here with a link back to YOUR post (not your blog, but your recipe post)
2) if you don't have a blog, then paste your recipe into my comment section!

(Mom, I hereby suggest that you post about Three Sister's Ice Cream, lol!)
Please share as many recipes as you like, and have fun!

If you try anyone's recipes, let us know how they turned out.


Summer veggie pasta

-in one pot, cook rotini or penne noodles according to directions

-Heat large skillet and melt butter
begin to sautee diced onions and minced garlic
add several carrots, sliced (continue to add butter and small amounts of oil as needed)
let cook a few minutes
add squash - I use yellow and zuchinni
add some sliced or diced bell pepper
when these are almost done, add some roma tomatoes if you have them
season with salt, pepper, basil, garlic powder and onion powder

Put in any other veggies you want - these are what I've used. I bet fresh green beans would be great!

Once veggies are cooked, add cream cheese (1/3 of a package if you just make a little, a whole package if you are feeding more) and parmesan cheese.
Once cheese is melted, add some italian dressing, some extra vinegar, and a little milk, if desired. - I like it very saucy, to complement the penne I used (I actually used reconstituted powdered milk to get the consistency I wanted). If you want it thicker, I suggest using a thinner noodle like spaghetti or angel hair.

Serve over pasta.

(This is a good meatless meal, but it's SUPERB with chicken. You can cook the chicken seperately on the grill and serve it on top of the pasta and sauce, or you can cook it with the veggies - just dice it and put it in with the onions, Season with cavender's and let it brown before you add the carrots.)

This meal is great served with chunks of watermelon, cantaloupe, pineapple or other fresh fruits.

I'm gonna make this again soon, with even more squash, as my MiL has started to give us some fruits of their garden.

I also have peaches, nectarines, a fresh watermelon, and a half a pound of strawberries (all storebought) frozen blueberries, and will be getting some homegrown plums.
I can't wait to hear some new ideas for enjoying these summery treats!

chop up as many strawberries as you'd like, mix with a container of whipped cream, pour into a graham cracker crust and freeze. serve frozen.

i ate way, way too much of that.

I need to get some lettuce, now :D

the strawberry pie looks good to - methinks I know what I'm taking to the next potluck. I bet it'd be good with blueberries mixed in :)
